It is the time of year for comfort food! Here are two delicious tummy warmers for you to try out. Both are sure to be your new fall favorites.
Red Cabbage Casserole
8 cups shredded red cabbage
¼ cup sugar
1 medium onion chopped
1 tbs. canola oil
1 tsp. salt
1 tsp. lemon juice
1 to 2 medium tart apples
¼ cup red currant jelly
- In Dutch oven combine first 6 ingredients, cover and cook over medium heat 10-15 minutes or until cabbage is crisp and tender, stir occasionally
- Add apples; cook 10-15 minutes or until cabbage and apples tender. Stir in jelly until melted.
Hearty Beef and Cabbage Skillet

1.5 # lean ground beef
1 onion chopped
¾ cup brown rice, uncooked
3 cups coarsely chopped cabbage
1 8 oz. can tomato sauce
1 (14 ½ oz.) can diced tomatoes, undrained
1 ¼ tsp garlic powder
1 ¼ tsp onion powder
½ tsp salt
½ tsp black pepper
- Coat a large skillet with cooking spray. Add beef and onion and sauté over medium heat 6 to 8 minutes, or until no longer pink. Drain excess liquid.
- Add remaining ingredients: mix well. Bring to boil, then reduce heat to low and simmer, covered, 35-40 minutes or until rice is tender
