If you are like me you have a lot of tomatoes this time of the year. This Bruschetta recipe is fast, easy and very tasty. I like to serve it with warm baguette slices.
4-5 fresh roma tomatoes or (3-4 regular tomatoes) diced
2 garlic cloves, minced (or more if you like it really garlicky)
1/4 cup fresh basil chopped fine
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon each salt & pepper (or to taste)
- Slice a baguette into 1/4” thick rounds.
- Arrange on a baking sheet in a single layer.
- Drizzle with olive oil.
- Bake at 350 degrees for approx. 10 minutes.
